ハンバーガーとの出会い
friscoの創業者が初めてアメリカの地を踏んだのは1968年10月です。
カリフォルニア州サンフランシスコ湾東部、バークレーにあるカリフォルニア州立大学へ留学するためでした。
当時のアメリカはベトナム戦争や学生運動が激しく、キャンパスでは連日抗議集会が繰り返されていました。催涙弾やペッパーガスが飛び交う中、口や目を押さえながら授業に向かう日々が続きました。
そんな時代に流れていたのは、シカゴ、ビージーズ、ビーチボーイズといった名曲たちでした。
創業者が初めて本物のアメリカンハンバーガーに出会ったのは、バークレーの小さなバーガーショップ“KIPS”でした。
当時のバーガーやステーキは炭火焼きが主流で、その香ばしい味わいは今も色褪せることなく胸に刻まれています。
しかし1970年代以降、ファーストフードの波が広がり、1980年代には本格的な炭火焼きバーガーはほとんど姿を消してしまいました。
36年間のアメリカ生活を終え、2004年に帰国した創業者は、その経験と想いを土産として、日本に本物のアメリカンバーガーを届ける決意を固めました。
frisco 誕生
2005年、東京・下北沢のビルとビルに挟まれた、ひっそりとした5坪の場所でfriscoをオープンしました。
「隠れ家というより隠れすぎ！」とお客様に笑われつつも、青春時代に味わったあの味を忠実に再現し、日本でよみがえらせることができました。
friscoでは、肉本来の旨みを引き出すため、厳選した牛肉を熟成させてから使用しています。
熟成によって肉の旨みと香りが増し、一口ごとに深い味わいを楽しんでいただけます。
下北沢での5年間は、多くのお客様に支えられ、日本全国はもちろん海外からもご来店いただきました。心より感謝申し上げます。
現在、そしてこれから
現在は福岡・天神地区に拠点を移し、営業を続けております。
遠く離れていても、週末や連休には関東や関西からお越しいただくお客様も多く、大変ありがたく感じております。
創業者が36年のアメリカ生活で培った経験と想いを込めた、あの懐かしい香りと味わいを、これからも変わらず皆さまにお届けしてまいります。
Encounter with Hamburgers
The founder of frisco first arrived in the United States in October 1968, to study at California State University, Berkeley, located on the eastern shore of the San Francisco Bay.
At that time, America was in the midst of the Vietnam War and student protests, with daily demonstrations on campus. Students often attended classes while shielding their eyes and mouths from tear gas and pepper spray.
Meanwhile, the music of that era—from Chicago to the Bee Gees and the Beach Boys—played in the background of these turbulent days.
The founder’s first taste of a genuine American hamburger came at a small burger shop in Berkeley called “KIPS.”
Charcoal-grilled burgers and steaks were standard at the time, leaving a smoky, savory impression that remains unforgettable to this day.
However, by the 1970s, fast-food chains began spreading rapidly, and by the 1980s, authentic charcoal-grilled burgers had almost disappeared from the U.S. dining scene.
After 36 years in the U.S., the founder returned to Japan in 2004, determined to bring the authentic flavors, techniques, and spirit of American burgers back home.
The Birth of frisco
In 2005, frisco opened in a cozy five-tsubo space tucked between buildings in Shimokitazawa, Tokyo.
Customers often joked that it was “more hidden than a secret hideout,” but the founder faithfully recreated the flavors of his youth, bringing authentic American burgers to Japan.
At frisco, we carefully age select cuts of beef to enhance their natural flavor. This process enriches the meat’s aroma and taste, delivering a deep, satisfying flavor in every bite.
During our five years in Shimokitazawa, frisco was supported by numerous customers from across Japan and abroad, for which we are truly grateful.
Today and Beyond
Today, frisco operates in Tenjin, Fukuoka.
Despite the distance, many customers travel from the Kanto and Kansai regions on weekends and holidays, and we sincerely appreciate their continued support.
We remain committed to delivering the nostalgic, smoky flavors and heartfelt taste that the founder cherished during his 36 years in America, consistently and faithfully to every guest who visits us.
